Wanton Noodles



Wanton Noodles
 
 Ingredients
  • Minced Meat
  • Water Chestnuts
  • Spring Onion
  • Salt , soya sauce and pinch of sugar to matinate
  • Wanton Skin
Ingredients
  • Wanton Noodles
  • Char Siew Sauce, Oyster sauce sauce and sesame oil
  • Soya Bean Soup
Method
  • Chop the water chestnuts
  • Mixed all the ingredients together
  • Wrap in wanton skin by dabbing water on the sides of the wanton skin
  • Cook the noodles in boiling water and sieve them through cold water
  • Mixed char siew sauce, oyster sauce, sesame oil and soup to make the noodles gravy base
  • Pour the gravy over the noodles.

Soya Bean Soup


Soya Bean Soup
 
Ingredients
  • 3 litre water
  • A handful of ikan bilis ( anchovies)
  • 150g soy bean, soaked in water overnight
  • 2tsp salt or to taste
Method
  • Add all ingredients in a large pot, boil over low heat for 1-2hour.

豆油雞Soya Sauce Chicken
Ingredients
  • 1 chicken
  • 1 cinnamon stick (桂皮) /1 star anise (八角) 4 cloves (丁香)
  • Or 1/2 to 1 pack of spices
  • Garlic Cloves
  • Sugar 1 Chinese Soup Spoon
  • Dark Soya Sauce
  • Corn Flour to thicken (4 tablespoon of cornflour)
  • Dash of Salt
Method
  • Marinate the chicken with salt (including inside of the chicken)
  • Smash the garlic clove slightly
  • Heat up oil in frying wok. Add spices and garlic cloves to fry till fragant
  • Change the fire to low fire and pour in the sugar to melt slowly
  • After sugar has melted, add the water till it covers 3/4 of the chicken
  • Add dark soya sauce and dash of salt
  • Cook the chicken for 10 mins and flip the chicken over to cook another 10 mins with medium fire.
  • Turn off the fire and soak the chicken for another 10 mins before serving.
  • Cut the chicken and serve the chicken seperately with the sauce.
  • The sauce can be thicken using corn flour.

Cooking with Hulk - White Radish and Carrot soup

White Radish and Carrot soup
 
Ingredients
  • 300 gm of pork ribs
  • 1 radish, peeled and cut into pieces
  • 1 carrot, peeled and cut into pieces
  • 2 litre of water water
  • 1/2 teaspoon of white peppercorns, lightly pounded with the back of cleaver
  • Salt to taste
  • Chopped spring onion for garnishing
Method
  • Blanch the pork ribs in boiling water and set aside.
  • Bring 2 liter of water to boil in a pot. Add white pepper and pork ribs. Leave it simmers for half an hour.
  • Add carrot and radish and leave it simmers under low heat for another 1 hour.
  • Add salt to taste. Garnish with spring onion just before serving.

Starfruit Almonds Lean Meat Soup

Ingredients
  • 4 starfuits
  • 600 grams lean meat
  • 25 grams 南北杏
  • 5 蜜枣
  • 2 litres of water
Method
  • Remove core from starfruit and cut the hard edges off. Cut into slices
  • Clean 蜜枣
  • Clean lean meat and blanch it
  • Put all ingredients into claypot and cook for 2 hours.

Cooking with Hulk - Bitter Gourd Lean Meat Soup

Bitter Gourd Lean Meat Soup

Ingredients
  • Bitter Gourd 300 grams
  • Lean Meat 150 grams
  • 1 slice of Ginger
  • 1/2 tablespoon of light soya sauce
  • Corn Flour
  • 1 tablespoon of Olive Oil
  • Salt to taste
  • 1.5 litres of water
Method
  • Wash the bitter gourd, cut into thick pieces
  • Add 1/2 teaspoon of salt and marinate the bitter gourd for half an hour
  • Cook the marinated bitter gourd in boiling water for 3 minutes to remove the bitter taste
  • Rinse the bitter gourd and dry it. Put aside
  • Clean the lean meat, cut into thin slices and add the seasoning to marinate for 10 minutes
  • Cook the sliced meat into boiling water till half cooked and set aside
  • Heat the oil and fry the ginger till fragrant.
  • Add water and cook the bitter gourd for another 10-15 minutes before adding the lean meat.
  • Once lean meat is cooked., add the salt to taste. Dish is ready to serve.

Cooking with Hulk - Sweet Potato Chicken Soup

Sweet Potato Chicken soup

Ingredients
  • Half of a kampung chicken, chopped into bite size and soak in water
  • Half of a yellow onion, sliced
  • 250 gm sweet potato, skinned and cut into bite size
  • 2 clove of garlic, chopped
  • 3 slice of ginger
  • 3 tbsp olive oil
  • 1.5 liter water
Method
  • Boil the soup for 1-2 hours and add the seasoning below for taste
    • Dash of pepper and Sea salt
    • 1 tbsp of oyster sauce
    • Light soy sauce to taste

Cooking With Hulk - 玉米湯

玉米湯

Ingredients
  • 1 can of corn (creamed)
  • 2 whole chicken eggs
  • 1 L of water
  • Optional additions:
  • 1/4 pound of ground meat (pork or chicken)
  • 1 cup of frozen vegetables (peas, corn, carrots)
Method
  • Boil water with can of creamed corn
  • In a separate  bowl, crack open and scramble chicken eggs
  • Add additional ingredients as necessary
  • When boiling, slowly stream in scrambled eggs while stirring soup
  • Boil for another 5 minutes

Cooking With Hulk - Salt Intake

Hee.. I must admit i am obsessed with the nutritional labels on all the food package(especially food for the little one). It has gone to the extend whereby there will be sense of achievement when a super healthy food(less sodium and less sugar) is detected hahaha...

Here are some useful tips for mothers with toddlers.

Recommended maximum daily salt intake for children

How to Calculate the Salt Content of Food:
Most labels on foods give the amount of sodium in grams per 100g of food.
     High-sodium foods contain around 0.5g per 100g
     Low-sodium foods contain 0.1mg or less sodium per 100g

If you want to calculate the salt content of a product, you need to multiply the amount
of sodium by 2.5 e.g.
0.1 gram of sodium per 100g = 0.25 grams salt
You then need to know the weight of the serving portion in grams, multiply this to work
out the amount of salt in the serving.

For small eaters like babies, the best way to prepare their food is to cook their food in bulk and freeze them into individual portions. This method simply saves time in preparing, cooking and washing.

Cooking with Hullk - Pork Stock

Over the long weekend, i decide to try preparing stock with new ingredients - 大头骨. I bought 1kg 大头骨($3) from the market. I read this from another blog that she used 2-3 bones for 2.5 litre of water. Kiam siap me only put 2 bones to cook the stock, which i think its a bit diluted to my taste. Next time, i will just dump all the bones in and cook to try again.

This stock is good for freezing. Frozen stock can be thawed to cook toddler porridge. :)


Pork Stock
- 1 kg of 大头骨 (3.5 Bones)
- 2.5 Litres of water
- Slow Cooker for 5 hours

Cooking with Hulk - Porridge Porridge Porridge

Ever since boy starts solids, there is at least one porridge meal for him everyday. It doesn't help that this little dino is fussy at eating, forcing his mum to think all of combinations of porridge on earth to satisy him.

Porridge
  • Chicken liver meat and spinach porridge + ikan Bilis Powder
  • Luffa + Egg + Corn + Scallop Porridge
  • Cheese and Mushroom Porridge
  • Sweet potato, Gei Ji and Cod porridge
  • Tomato, Red Pepper, Celery, Onion Soup + Porridge

Ingredient
  • Baby Corns
  • Butter
  • A pinch of salt
  • Herb (optional)
Method
  • Melt butter in a pan.
  • Sauté baby corn till slightly brown.
  • Add a pinch of salt.
  • Sprinkle herb (optional).
  • Remove and serve.

Cooking with Hulk - Chicken Stew

Chicken Stew
Ingredients
  • 1 chicken drumstick
  • 1 medium size onions (chopped)
  • 2 medium size potatoes (chopped into cubes)
  • 2 medium size tomatoes (chopped into cubes)
  • 1 stick of celery (chopped finely)
  • 2 tablespoons of frozen vegetables
  • water
  • salt to taste (optional)
  • a sprinkle of pepper
Method
  • Boiled the drumstick in a pot ensure that the drumstick is just about immersed in the water. Let it boiled till the chicken is cooked. Removed any fats from the broth if any. Take out the boiled drumstick and set it aside to cool before shredding the meat.
  • Then add in potatoes and onions into the chicken broth. Boiled till the potatoes are soft and tender. Take out about half cup of potatoes and mashed it up and place it back into the soup (this will help to thicken the soup)
  • Add in the celery, tomatoes and shredded chicken meat into the stew and simmer for 45 minutes uncovered.
  • Add salt (optional) and pepper to taste

  • Steamed Fish with Sour Plum,Tomatoes and Coriandar (Use only 1/8 of plum for toddler)
  • Pan Fry Fish with Dark Soya sauce and Spring Onions

Cooking with Hulk - Pan Fried Dory Fillet With Herbs

Pan-Fried Fish with Mashed Potatoes
Ingredients
  • Half of dory fish fillet
  • 1/2 tablespoon of Italian spices
  • Lemon juice (from half of a lemon)
  • 1/2 teaspoon of pepper
  • 1 tablespoon of butter for frying
Method
  • Place the fillet in a bowl.
  • Add in pepper, Italian spices and lemon juice and mix well to marinate for about 10 minutes.
  • Heat up the butter in a frying pan.
  • Once hot, put in the fillet and pan fry till cooked. Occasionally flip the fillet so that it is evenly cooked.

Cooking With Hulk - Honey Baked Cod

Honey Baked Cod
Ingredients
  • 2 Big Slices Cod Fish
  • Homemade Teriyaki Sauce
Marinade
  • 6 tablespoon Soy Sauce
  • 5 tablespoon Honey
  • 1 tablespoon Chinese Cooking Wine
  • 1 tablespoon Water
Sweet Mustard Dressing(for side salad)
  • 2 tablespoon Honey Mustard (I use MasterFoods)
  • 1 tablespoon Honey
Method
  • Mix the marinade well.
  • Pour over the the cod and marinate for 30 minutes.
  • Preheat oven at 160C.
  • Lay your baking tray with Glad baking paper.
  • Grill the cod for 20 minutes skin-side down before turning over.
  • Grill the other side for another 12 minutes or till fully cooked.

Cooking with Hulk - Baked Cod Fish with Teriyaki Sauce

Baked Cod Fish with Teriyaki Sauce
Ingredients
Method
  • Place the cod fish on a baking sheet lightly coated with sesame oil and in a pre-heated oven, bake the fish at 200degC for about 20minutes. Flip over at 10 minutes.
  • Remove the fish from the oven when they're baked, drizzle the teriyaki sauce all over. Garnish with spring onions if desired.

Cooking with Hulk - Grilled Salmon with Herbs

Grilled Salmon with Herbs
Ingredients
  • 100g Salmon
  • 1 glove Garlic, chopped finely
  • Lemon Zest of 1 Lemon
  • 1/2 tablespoon Dill, chopped
  • A pinch of salt and pepper
  • A wedge of lemon
Method
  • Rub salt and pepper on salmon and set aside for at least 1/2 hour in the fridge
  • Mix the rest of the ingredients together except lemon.
  • Spread the herb mixture on both sides of the salmon, more on the top.
  • Grill in oven at 180C for 30 minutes or till cooked.
  • Squeeze on some lemon juice just before you eat.

Cooking with Hulk - Salmon Teriyaki

Salmon Teriyaki
Ingredients
  • Salmon
  • Garden Peas
  • Carrots
  • Onion
  • Garlic
Teriyaki Marinade/Sauce
  • 200ml Clean Tap Water
  • 2tbs Light Soya Sauce
  • 2tbs Mirin (Japanese Wine)
  • 0.5tsp Light Brown Sugar
  • 1 tsp Corn Flour>
  • few drops of rice wine
  • Corn Flour: Mix with 2tbs of clean tap water
Method
  • Marinate Fish and sauce for at least 1 hour in the fridge
  • With a teaspoon of olive/canola oil, brown both sides of the tuna in a frying pan. Keep the marinade to make sauce later.
  • Remove the salmon and place on a paper towel to soak off excess oil.
  • Back in the frying pan, drop another teaspoon of oil and brown the garlic and onions.
  • Add the peas and carrots, fry for about a minute.
  • Add the teriyaki marinade till fully covering the veggies. Simmer for about 10 minutes until veggies are cooked. Add water if the sauce is getting dry.
  • Pour in the corn flour mixture, stir to mix well.
  • Sprinkle with some ground black pepper then remove from heat.
  • Pour this sauce over the pan-fried salmon Sprinkle some sesame seeds then serve.

Cooking with Hulk - Baked salmon with tomato and cheese

Baked Salmon with Sweetcorn, Tomato And Cheese
Ingredients
  • 1 Salmon Fillet (350g), cut into 1.5" cubes
  • Some Japanese Mayonnaise
  • 2 Tablespoons Fresh Corn Kernels
  • Tomato cut into wedges
  • 1/2 Cup of Shredded Mozzarella Cheese
  • Some Freshly Ground Black Pepper
Method
  • Arrange salmon cubes on a baking plate, top with generous amount of Japanese mayonnaise and sprinkler some freshly ground black pepper on it.
  • Evenly scatter sweetcorn kernel and tomato on the salmon cubes and top with shredded mozzarella cheese.
  • Bake prepared salmon in an oven toaster or preheat 200 degree Celsius oven for 15 - 20 minutes or till salmon is cooked to your preference.

Cooking with Hulk - Steamed Fish with Kiwi

I saw this exotic recipe online which looks interesting.

Steamed fish with Kiwi fruit
Ingredients
  • 300g of Fish Fillet
  • 1 Zespri Kiwifruit, cut into wedges
  • 1/2 Teaspoon Sesame Oil
  • 1/2 Teaspoon Cooking Wine
  • 4 Slices of Ginger, Shredded
  • 1 Stall of Spring Onion (optional), cut into sections
  • Some Wolfberries (枸杞)
  • Freshly Ground Pepper
  • Some Sliced Chilli, optional
Method
  • Clean and pat dry fish fillet, arrange it on steaming plate together with the rest of the ingredients.
  • Steam it over medium using stove or electrical steamer for about 12 minutes depending the thickness of the fish.

Cooking with Hulk - HongKong Steamed Fish

Hong Kong Steamed Fish
 
Ingredients
  • 1 Star Garoupa fish (or sea bass, sole, or any white fish), approx 600g—gutted and scaled
  • Fresh ginger
  • 10 spring onions
  • 1 tsp of sugar
  • 4 Tbsp soy sauce
  •  6–7 Tbsp of Canola Oil 
Method
  • Dry fish with kitchen paper.
  • Slice some fresh ginger—around four or five slices—and place on top of fish.
  • Cut spring onions into lengths of approximately 3 inches and place half under the fish.
  • Sprinkle sugar and 1 tablespoon soy sauce onto the fish.
  • Steam fish for approximately 6 minutes. Place remaining spring onions on top of fish.
  • Boil oil and pour directly onto the fish.
  • Add another 3 tablespoons of soy sauce 

Cooking with Hulk - Steamed Miso Cod Fish

Steamed Miso Cod Fish
Ingredients
  • 350g Cod fish (tail part), sliced
  • 6 red dates, washed and sliced
  • some ginger, shredded
Seasonings
  • 1 tbsp Japanese Miso paste
  • 2 - 3 tbsp water
  • A dash of Pepper
  • A few drops of sesame oil
  • Garnishing
  • Spring onions, shredded (soak in water to get nice curl)
Method
  • Place cod fish, red dates and ginger in a steaming plate.
  • Mix all seasonings in a small bowl and spoon over cod fillet/steak.
  • Steam over high heat for about 5 - 7 mins.
  • Garnish with spring onions and serve immediately.

Cooking with Hulk - Pan Fry Fish with Miso

Since this blog has went dead for quite some time, i have decided to make good use of it to note down the recipes that i have collected for cooking. Eversince after we have got married, i have progressed from cooking simple dishes for the two of us to baby food, then toddler meal and full meal for 3-6 people (depending whether grandparents, sis and brother in law are around).
Hopefully with these recipes, Purple Dinosaur can help on meal planning too. hahahaha

Pan Fry Fish with Miso
Ingredients
  • mirin(1.5 teaspoon)
  • Rice white vinegar(0.5 teaspoon)
  • White miso paste(0.5 teaspoon) and
  • sugar(sprinkle)
  • 0.5 teaspoon minced ginger
Method
  • Marinate with fish with ingredients for 30mins to 1 hour
  • Scrap off excess marinate and pan fry it
