Braised Minced Pork, Potato and Carrot
 Serving: 3-4 
 
 Ingredients
  • 100g Minced Meat
  • 180g potato (about 1 medium potato size)
  • 80g carrot
  • 80g yellow onion (chopped)

 Marinade for minced meat
  • 11/2 tsp light soya sauce
  • 1/4 tsp dark soya sauce
  • 1/4 tsp sugar
  • 11/2 tsp cornflour
  • Dash of pepper
Seasoning
  • 1 tbsp oyster sauce
  • 1/2 tsp sugar
  • 100ml water
  • Salt, pepper and sesame oil
Method
  • Marinade the minced meat for half hour
  • Dice carrot in small cubes. Boil or steam carrot till cooked.
  • Dice Potato in small cubes. Soak in water for 5 minutes to prevent from turning dark. Drain off and pat dry with kitchen paper. Heat up pan with oil over medium high heat. Stir fry potato until cooked and lightly golden brown.
  • Heat up pan again with oil over medium heat. Add onion and sauté until soft. Push onion aside. Add pork and spread it out. Do not sir fry immediately. Let it cook slightly caramelized. Flip it over and cook the other side for a while. Reduce the heat to low and break the pork into tiny bits. Add the potato and carrot. Stir fry.
  • Add the seasoning. Cover the lid and simmer, stirring occasionally for 10-15 minutes.
  • Season to taste with sesame oil, pepper and salt. (optional)
