Wanton Noodles



Wanton Noodles
 
 Ingredients
  • Minced Meat
  • Water Chestnuts
  • Spring Onion
  • Salt , soya sauce and pinch of sugar to matinate
  • Wanton Skin
Ingredients
  • Wanton Noodles
  • Char Siew Sauce, Oyster sauce sauce and sesame oil
  • Soya Bean Soup
Method
  • Chop the water chestnuts
  • Mixed all the ingredients together
  • Wrap in wanton skin by dabbing water on the sides of the wanton skin
  • Cook the noodles in boiling water and sieve them through cold water
  • Mixed char siew sauce, oyster sauce, sesame oil and soup to make the noodles gravy base
  • Pour the gravy over the noodles.

Soya Bean Soup


Soya Bean Soup
 
Ingredients
  • 3 litre water
  • A handful of ikan bilis ( anchovies)
  • 150g soy bean, soaked in water overnight
  • 2tsp salt or to taste
Method
  • Add all ingredients in a large pot, boil over low heat for 1-2hour.

豆油雞Soya Sauce Chicken
Ingredients
  • 1 chicken
  • 1 cinnamon stick (桂皮) /1 star anise (八角) 4 cloves (丁香)
  • Or 1/2 to 1 pack of spices
  • Garlic Cloves
  • Sugar 1 Chinese Soup Spoon
  • Dark Soya Sauce
  • Corn Flour to thicken (4 tablespoon of cornflour)
  • Dash of Salt
Method
  • Marinate the chicken with salt (including inside of the chicken)
  • Smash the garlic clove slightly
  • Heat up oil in frying wok. Add spices and garlic cloves to fry till fragant
  • Change the fire to low fire and pour in the sugar to melt slowly
  • After sugar has melted, add the water till it covers 3/4 of the chicken
  • Add dark soya sauce and dash of salt
  • Cook the chicken for 10 mins and flip the chicken over to cook another 10 mins with medium fire.
  • Turn off the fire and soak the chicken for another 10 mins before serving.
  • Cut the chicken and serve the chicken seperately with the sauce.
  • The sauce can be thicken using corn flour.
