豆油雞Soya Sauce Chicken

- 1 chicken
- 1 cinnamon stick (桂皮) /1 star anise (八角) 4 cloves (丁香)
- Or 1/2 to 1 pack of spices
- Garlic Cloves
- Sugar 1 Chinese Soup Spoon
- Dark Soya Sauce
- Corn Flour to thicken (4 tablespoon of cornflour)
- Dash of Salt
- Marinate the chicken with salt (including inside of the chicken)
- Smash the garlic clove slightly
- Heat up oil in frying wok. Add spices and garlic cloves to fry till fragant
- Change the fire to low fire and pour in the sugar to melt slowly
- After sugar has melted, add the water till it covers 3/4 of the chicken
- Add dark soya sauce and dash of salt
- Cook the chicken for 10 mins and flip the chicken over to cook another 10 mins with medium fire.
- Turn off the fire and soak the chicken for another 10 mins before serving.
- Cut the chicken and serve the chicken seperately with the sauce.
- The sauce can be thicken using corn flour.
